Fried Catfish & Catfish Courtbouillon

Fried Catfish

Ingredients

  • 5 lbs catfish
  • DiCapo's Season All
  • Cajun Chef Hot Sauce (1 bottle)
  • 1 gal LouAnna Peanut Oil
  • 1 lb flour
  • 1 lb corn flour
  • 2 oz mustard

Instructions

  • Season fish with Season All, hot sauce, and mustard
  • Heat oil to 350 degrees
  • Shake fish in flour and corn flour mixture
  • Fry until golden brown

 

Catfish Courtbouillon

Ingredients

  • 5 lbs catfish
  • DiCapo's Season All
  • 1 can tomato sauce
  • 3 cans Cream of Mushroom Soup
  • 2 sticks of butter
  • 3 onions
  • 1 bell pepper
  • 1 rib celery
  • 3 cloves garlic
  • 1 bunch of green onions
  • 1 bunch of parsley

Instructions

  • Saute' onion, bell pepper, celery, and garlic in butter
  • Stir in tomato sauce and cream of mushroom soup
  • Let cook for 45 minutes
  • Add fish, green onions, and parsley
  • Let simmer for 30 minutes
