Cake
- 1 box carrot cake mix.
- 1 egg
- 1 stick melted butter
- Preheat oven to 350.
- Combine above ingredients and mix well. (Batter will be dry).
- Pat into lightly greased 13 X 9 pan.
Filling
- 1 8oz pkg cream cheese,softened
- 2 eggs
- 1 t. vanilla(optional)
- 1 stick melted butter
- 1 box powdered sugar
- 1/2 - 1 cup chopped pecans
- Beat cream cheese until smooth. Add eggs and vanilla. Add butter; beat.
- Add powdered sugar, mix well. Add pecans last.
- Spread over cake mixture. Bake 40-45 minutes. You do not want to overbake.
The center should be gooey coming out of the oven. Serve hot and gooey or cool completely before serving.
