Catfish Etoufee

 

Ingredients:

  • 1/2 stick margarine
  • 1 1/2 cups seasoning blend
  • 1/2 cup bell pepper
  • 1 can (8 oz.) Hunt's tomato sauce
  • 1 can Cream of Shrimp soup
  • 1 can Rotel Extra Hot diced tomatoes & chili peppers
  • 2-2 1/2 lbs. filet catfish
  • 1 cup onion tops

Instructions:

  1. On medium/high heat, saute' the margarine, seasoning blend and bell pepper with 1/2 cup of water for 15-20 minutes
  2. Add tomato sauce, soup and Rotel. Reduce heat to medium and simmer for 45 minutes. Stir frequently and add water as necessary
  3. Add lightly seasoned catfish (salt, black pepper and garlic powder) and cook on low heat for 30 minutes
  4. Add onion tops and cook for an additional 15-20 minutes
