Cajun Brew

With the abundance of spicy Cajun food in Acadiana, people are bound to be thirsty.

One man hopes his beer, crafted especially to compliment Cajun cuisine, will be the preferred remedy.

The Bayou Teche micro-brewery has opened up inside an old railroad car located just south of Arnaudville.

Take a big crawfish pot fill it with barley, yeast, hops and allot of water, let the temperature cool, put it in the ferment, 10 days later you have beer.

Not just any beer, but in becoming the fourth brewery in the state and the only to serve Acadiana Karl Knott set out to craft a pale ale beer that compliments the rich flavors and spices of Cajun food, with plenty of hops to cut through all the cayenne pepper.

"It's like heaven when you try a really good beer with Cajun food" says Knott.

After being stationed in Europe while in the army, Knott says he came to love beer, and wanted to start a conversation in Louisiana about good food and good beer. He and his brother's says their “Biere Pale”, would be a good conversation starter.

"We want to do that here, we have the food, and we’re working on the beer."

"Idea came to sell commercially about 2 years ago, because this is Acadiana, people don't go to St.  Louis to buy boudin, so why get their beer from the Midwest?" says Knott.

At Poche's market and restaurant in Breaux Bridge, there seems to be future customers, eager to try a native-brewed beer.

Bayou Teche brewery hopes to have their “Biere Pale” on the shelves in about a month. They are currently working on deals with distribution companies, to push their product.
